Hi Bunnies,

Hope you are eating well today.

Post-holidays, or maybe post - a year of so much indulgence, my tummy is tired. When it is normally an endless pit. I haven’t craved much lately. Maybe some popcorn or a random craving here or there. But when I was home, my mom made braised daikon. This is something I keep saying that I want to constantly be on the stovetop, for a meal throughout the week. My kind of meal prep. It’s cold, we need to eat roots and be grounded with the world.

And now it seems that NO store has daikon in stock. Well that is not true, there was one at WF last week that looked as though it was run over by a car on a dirt road. Thankfully, I found a good one this weekend at Lani’s farm stand at the Union Square greenmarket.

Here is my mom’s recipe for Braised Daikon with my edits:

Note: This is definitely better the day after. I would just make it and it eat throughout the week. I prefer mine more brothy and with rice. but you would optionally do glass noodles in there or add some mushrooms and shungiku.
